RECIPES
Lasagna Primavera
12 lasagna noodles
2 cups shredded carrots
2 cups shredded yellow squash
2 cups shredded zucchini
2 cups shredded mozzarella cheese, divided
1 tsp. crumbled oregano
1 tsp. crumbled basil
1/2 tsp. thyme
1/2 tsp. salt
1/2 tsp. pepper
2 eggs
2 cups ricotta or low-fat cottage cheese
1 (32-oz.) jar of pasta sauce
1. Cook lasagna noodles according to package directions. Drain and set aside.
2. Preheat oven to 375 degrees. Using a large mixing bowl, fold the vegetables, 1 cup of the mozzarella cheese, herbs, salt, pepper and eggs into the ricotta or cottage cheese.
3. In a (9x13-inch) pan, place a couple of tablespoons of the pasta sauce on the bottom, spreading evenly. Place a layer of noodles in the pan.
4. Top with half of the vegetable filling, then half of the remaining sauce. Repeat for the second layer. Finish with the remaining noodles and cheese.
5. Cover with foil and bake for 1 hour, removing foil for the last 10 minutes for cheese to brown. Serve warm. Serves 10.

I trust you all had a wonderful February and are looking forward to a great March 2010. With the coming of March, it means Spring is around the corner. I don’t know about you, but I am ready for Spring to arrive.
I want to say thank you to all of the chairmen that are stepping up and working so diligently in helping RCLP achieve its accomplishments and goals. I know that this year is going to be a successful year for RCLP. In saying that, plans for upcoming meetings are an Open Forum meeting in May, wherein you will have a voice, and a legal seminar in September.
Have you had a chance to see the articles published in The Advocate regarding RCLP? If not, there are copies of the articles in this edition of the De Novo. Great exposure for our organization.
For those that were at the February meeting, we had a real treat. Tim Burgmeier, Attorney, spoke about estate planning and IRS tax law. He made a what could have been a very boring subject interesting. If you were unable to attend, you were missed.
Just a reminder to renew your membership if you have not done so.
